Baros Maldives, the award winning, private boutique luxury resort in the Indian Ocean, has introduced a new gourmet menu in its all-day dining lagoon-view a la carte restaurant, Lime. This has been created by the recently appointed Executive Chef, Gabriël le Roux, and includes tropical versions of traditional favourites. The Lime Restaurant, open to all guests for breakfast, now features an all-day menu with Chef’s signature dishes such as a salpicón of fresh seafood in a light curried-crayfish mayonnaise presented in a vol-au-vent with a mango and coconut salad, or poached lobster tail with Marie Rose sauce, iceberg lettuce, tomato, coriander, lime juice and horseradish wrapped in puff pastry. The new menu at Lime is part of the innovations at Baros Maldives as the island celebrates its 40th anniversary year as the third resort to open in the Maldives. Complementing the informal ambience of Lime, the island’s iconic Lighthouse Restaurant focuses on gastronomic masterpieces and degustation menus paired with superb sommelier-selected wines. For more relaxed dining the beachside Cayenne Grill entices fastidious diners with individually grilled fresh seafood or meat items as well as satay and Teppanyaki specialties. Exclusively at Baros Maldives, gourmet creations can be enjoyed by request on the beach under the stars, on an isolated sandbank 15-minutes from the shore, on a wooden deck shaped like a grand piano poised above the lagoon, and on a romantic cruise on sailing dhoni, as well as in the seclusion of guests’ private villa. The resort, with 30 overwater villas, five with secluded sundeck swimming pools, and 44 beachside villas, ten of which have individual plunge pools, and one romantic Baros Residence, is the ultimate retreat for gourmet cuisine in the Maldives.
