1. Berry crumble Layer frozen berries in a baking dish. Cover with a topping made with oats, brown sugar, reduced-fat spread and flaked almonds mixed well together. Bake in 180ºC oven until the topping is golden. Serve with reduced-fat ice cream. 2. Warm berry breakfast Add 1/4 cup frozen blueberries to your porridge – either straight into the bowl in the microwave, ?or add to the pot at the end of cooking. Serve berry porridge with a drizzle of honey and yoghurt. 3. Berry pancakes For a special weekend breakfast, make thick plain or buckwheat pancakes. Once one side is cooked, sprinkle the uncooked side with frozen berries and leave a few moments before turning. You can serve thawed, warm berries over the top of pancakes with vanilla-flavoured yoghurt. 4. Berry and fruit muffins Add any frozen berries to your favourite muffin recipe. Experiment with different types ?of berries and other fruit. My favourite combinations: banana and blueberry; raspberry and chocolate; mixed berry, apple and bran. 5. Berry coulis Make an easy berry sauce to serve with cakes, puddings or other desserts. Sprinkle frozen berries with a little castor sugar and let them defrost. Purée with a blender or food processor. If you like a smooth sauce, pass through a sieve to remove any seeds. Raspberry coulis is delicious with lemon cake. 6. Breakfast blue smoothie Combine 1 chopped apple, 1/4 cup frozen strawberries, 1/2 cup frozen berries, 1/2 banana, 1 cup trim milk or blueberry juice and blend until smooth. For extra fibre and flavour add 1/4 cup rolled oats. 7. Chocolate berry cake Make the HFG ultimate gluten-free chocolate cake and add 1 cup frozen blueberries or raspberries. This gives the cake a Black forest flavour and makes a delicious, moist cake. 8. Berry and apple filo strudel/pies Combine frozen berries and cooked or fresh apple slices. Add a few sultanas and a dash of vanilla. Prepare 4 filo sheets by spraying between the layers with oil. Place fruit mixture at one end, then roll up like a strudel. Brush with egg and bake for 15 minutes until pastry is crisp. 9. Berry meringue ice cream Soften a pack of reduced-fat vanilla ice cream. Add frozen mixed berries and blend using a mixer. The ice cream should turn a lovely pink colour. Add more berries and crumbled meringue pieces. Mix gently so meringue doesn’t break. Re-freeze until firm. 10. Berry and banana cake Add blueberries, boysenberries or raspberries to banana cake. Fold gently into mixture just before pouring the cake mixture into the tin, so the berries don’t break up too much.
