Prep time: 3 hours (including chilling) Cooking time: 10 mins (serves 1) Ingredients 120g testouri cheese 15g parsley, chopped 5g oregano 5g salt 5g black pepper 80g spring roll sheet 1 egg yolk, beaten 30g lettuce 30g cucumber, julienned olive oil, for frying 15ml lemon juice 5g sugar tomato, deseeded and finely sliced, for garnish Preparation 1. Mix testouri cheese with chopped parsley and oregano and season with salt and black pepper. Chill for 2 to 3 hours. 2. Cut spring roll sheet into triangular pieces. 3. Spoon cheese filling into centre of each triangle and roll up like a cigar. Seal edges with beaten egg yolk. 4. Deep fry cheese rolls in hot oil until golden. 5. Wash and clean lettuce, and tear it into rough pieces. Mix cucumber with olive oil, lemon juice and sugar. Place rolls on a bed of lettuce and cucumber. Garnish with tomato slices and serve.
