Chilli chocolate mousse Ingredients: Unsalted butter - 50 grams Mild Red Chillies - 1 tbsp Dark chocolate - 150 g, 70 per cent cocoa solids Eggs - 3 (separated) Castor Sugar - 3 tbsp Double Cream - 200 ml (whipped lightly) Method: 1.Melt the butter and chillies together and leave in a warm place to infuse for at least 30 minutes before straining. 2.Break the chocolate into small pieces and melt over a double boiler. Then, gradually add the infused butter and chocolate liqueur. Remove from heat and beat in the egg yolks. 3.Whisk the egg whites. Add sugar and whisk till the mixture is glossy. 4.Fold the egg whites into the chocolate mixture. Spoon into four tall glasses and chill for at least two hours. Top with whipped cream. Molten chocolate lava cake Ingredients: Butter (¾ cup) Bittersweet chocolate (8 ounces, coarsely chopped) Eggs 3 Egg yolks 3 Granulated sugar 1/3 cup Vanilla 1 teaspoon Flour 1 tbsp Powdered sugar Unsweetened cocoa powder Method: Preheat oven to 425°F. Grease six custard cups. Place them in a baking pan and set aside. In a small saucepan, combine the chocolate and butter. Cook and stir over low heat until the chocolate melts. Beat the eggs, yolks, granulated sugar, and vanilla until thick. Fold one-third of the chocolate mixture into the egg mixture. Spoon about 2/3 of the batter into each custard cup. Bake until the cake edges feel firm and cool them on a wire rack. Then, invert them onto dessert plates and sift with powdered sugar and cocoa powder. Serve immediately. Fillets of sole aux fines herbes Ingredients: 8 Fish fillets Salt and pepper Fish stock 4 tbsp White wine sauce (half pint) Finely chopped herbs (1 tbsp) Method: 1.Season the fillets with with salt and pepper and fold them in three. Place in a greased dish, add the fish stock, cover, and cook in a fairly hot oven for 15-20 minutes. 2.Drain the fillets and place on a dish, coat with white wine sauce and sprinkle with the finely-chopped fresh herbs.
