Prep time: 20 min Cook time: 15 min Total time: 35 min (serves 1) Ingredients 50g potatoes, preferably new potatoes like Yukon, boiled, peeled and grated 150g : semolina flour 100g : Parmesan 1 tbsp oil 1 tbsp finely chopped garlic 100g : spinach 50g : tomatoes, chopped Preparation 1. Mix together mashed potatoes and flour. Stir in Parmesan. Knead mixture until smooth. The dough should not be sticky. 2. Place dough on a floured surface and roll it out into a 1cm thick rope. Cut the rope into 3cm long pieces, to form gnocchi. 3. Blanch gnocchi in salted water. 4. Heat oil in a deep frying pan and sauté garlic until golden brown. Add spinach and tomatoes. Sauté until spinach is cooked and tomato is soft. Check seasoning. 5. Add gnocchi and heat through. Serve garnished with Parmesan shavings, if desired.
