4 large Granny Smith apples, peeled, cored 1 lemon, rind and 1 tablespoon juice 2 cups water 1/3 cup brown sugar 3 cinnamon quills 1/4 teaspoon ground all spice Instructions Step 1 Cut each apple into 8 wedges. Step 2 Place all remaining ingredients in a saucepan. Stir over a medium heat until sugar dissolves. Bring to the boil, then simmer for 5 minutes. Step 3 Add apple. Simmer for 10-15 minutes, or until tender. Serve hot.
