Ingredients Carrot 200 gms. Celery 50 gms. Lime 01 no. Onion 40 gms. Leek 40 gms. Vegetable stock 500 ml. Flour 20gms. Butter 20 gms. Salt 05 gms. Pepper Powder 10 gms. Cream 100 ml. Pine nuts 50 gms. Directions 1. Take butter and olive oil and heat the mixture. 2. Sauté the mirepoix and the carrot in it till they sweat. Season little while doing this. 3. Add the flour to it and sauté. 4. Add the vegetable stock and the pine nuts 5. Bring it to a boil and simmer till the time the vegetables are cooked. 6. Make a fine puree of the above with the help of a food processor or a blender. 7. Put it back on fire and add cream and bring it to a simmer and finish.
